• 20 sea urchins
• 2 dry onions
• 4 fresh onions
• 1 bunch of mint
• 1 bunch of parsley
• ½ kg chard
• ½ kg rice
• oil, pepper
- Place the sea urchins in a large bowl with water and stir them in order for the thorns to be removed. Once the thorns are removed, place them next to each other and open small holes.
- Put aside the eggs and after the urchins are cleaned, chop all the vegetables and mix with the rice and eggs.
- Then pour some sea water that was kept in the mixture and mix it all together again. We take every urchin separately and fill them with the mixture.
- Afterwards, place them one next to the other in a shallow pan, add 5 cups of water and boil them for as long as necessary for the rice to boil and remain some sauce.
