Ingredients (Serves 3)
- 1/2 kg soft flour
- 1/2 kg hard flour
- 1 glass of water olive oil
- 50 ml vinegar
- 200-300ml water
- 1/2 kg grated cheese (feta)
- Salt, pepper
Sift the flours and mix them into a bowl. Pour the vinegar and the salt. Knead slowly and slightly with your hand as you add water. As soon as the dough gets a form, we add the olive oil. Knead until the dough is neither too hard nor too soft. Once it is done, cover it and let it rest for a while.
Then, cut it in three pieces and roll out one by one the pieces with a rolling pin striving to make each one quite thin.
Lay in the first piece feta cheese in a straight line and wrap making a worm rewinding to become snail. Do the same for the rest of the two pieces.
We warm oil in a pan and fry the swivels until they have become golden brown.
