Since ancient times, Skopelos has been famous for its traditional dishes as well as its delicious appetizers, each of which has a unique flavor.
One of the most popular dishes of Skopelos is eggplant with yogurt, a refreshing recipe that seduces even the most demanding palates.
So let’s start making this authentic Skopelian recipe:
Wash the eggplants and peel them. Then slice them, sprinkle with salt and place them on a baking sheet. Grill them for about 10 minutes on medium heat and turn them over to cook evenly.
Put a spoonful of olive oil in a pan and sauté the onions. Then add a little garlic, a little tomato, sugar and pepper. Then pour the mixture over the eggplants and bake for an additional 15 minutes at 200C.
For the yogurt sauce mix yogurt, olive oil, garlic, pepper and basil.
When the eggplants are ready, put them in the mixer and create a slurry mixture, add the yogurt and sprinkle with walnuts.
